to clarify: the vermouth goes in with the butter for braising not the sauce. "The Art of French Cooking, Vol. 1" Julia Child and Simone Beck.
here's the recipe; it doesn't mention the vermouth because that was an optional addition. same with salting or marinating the pork in wine, salt, vinegar water or lemon juice the night before. recipe
the book. i would check it out at the library before buying tho. it's awesome. a bible of sorts. there is a movie about a woman who cooked her way thru it. "julia and julia" amazon it was my moms book so she has it now but i learned a lot from it.

SORRY DID I SCREW UP? i thought it was pork but its vinegar. french bistro style chicken with vinegar not the recipe i work from but its close chicken with vinegar i serve this with blue cheese potato au gratin another awesome book. this one i have bistro if i can still play TARRAGON
