Since I can't buy presents for everybody, I'll send recipes instead. smile

You may have seen this truffle recipe before, it ran in a lot of magazines. It takes some time, but it's not hard to do.

1 1/2(750g) - 1 3/4(875g)lb white chocolate, chopped
1 can (300ml) sweetened condensed milk
1 tbsp (15ml) orange liquer
finely shredded coconut (optional)

Melt 1 lb(500g) chcolate with sweetened condensed milk. Remove from heat; stir in liquer. Chill 3 hours or until firm. Shape into 1"(2.5cm) balls; place on wax paper-lined trays. Chill until firm.

Melt remaining chocolate. Dip truffles in melted chocolate and roll in coconut, if desired. Place back onto lined trays; chill.

Makes at around 5 dozen candies.

Note: You can dip the truffles in dark chocolate as well, but make sure it's tempered.

I'll post my never-failed fudge recipe tomorrow, if I can find it.

That sounds absolutely delicious. Plus, it sounds like something even I could make. Thanks! smile

P.S. What does "tempered" mean in relation to chocolate?

Quoting The Chocolate Lover's Cookbook:
Quote
When a recipe calls for melted chocolate, it must be heated in a bowl or on a plate suspended over (but definitly not in) a pan of, but not boiling, water. Over heated chocolate has a bitter taste and loses it's glossy shine and delicious aroma.
My recomendation is to just use white chocolate and melt it in the microwave. Although the chocolate fore dipping will have to be kept on the stove or it will harden before your finished.

The package the chocolate comes in should have good instructions, too.

Thanks Arachne!

Maybe I'll mix up a batch with coffee liqueur for the Caf!

lol Sounds good, Cramer.

I found my super easy fudge recipe. It says to use chocolate chips, but you can use any kind of baking chip. (Butterscotch, peanut butter, white chocolate...)

One tip: Always butter the pan and measure out the dry ingrediants ahead of time. It's much easier that way.

2 tbsp butter
2/3 cup (small can) evaporated milk
1 2/3 cups sugar
1/2 tsp salt
2 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate chips
1 tsp vanilla
1/2 cup chopped nuts (optional)

Mix butter, milk, sugar and salt in saucepan over medium heat. Bring to a boil. Cook 5 minutes, stirring constantly. Remove from heat.

Stir in marshmallows, chocolate chips, vanilla and nuts (if using.) Stir 1 to 2 minutes or until marshmallows melt.

Pour into buttered 8-inch square pan. Let cool, then cut into squares.

Arachne, you have just proven yourself to be the most formidable foe of the collective LWWL (Legion World Waist Line).

You could probably substitute low-fat condensed milk. That should help with the calories - or enable you to eat twice as much.

I seceded from that collective a long, long time ago.

Bring on the truffles and brownies!

That fudge recipe really comes in handy over the holidays. I hope you enjoy them.

And remember: marshmallows are fat free!

Just though I'd bump these up for the season. I didn't make the truffles this year, but I made fudge in both dark chocolate and white chocolate.

I was actually looking for Caroline's Harvest Fruit Pie recipe that she invented a couple of years ago. I made them again this year and they turned out great. (There was enough left over for two tarts, so I already got a taste. smile )

Edit: Found it, page 13 of Cafe Cramer.

If it works with real chocolate, I'll try it sometime. Not a white "chocolate" fan.

I don't see why it wouldn't. I know the fudge works with any kind of baking chip.

Fanfie reminded me of Arachne, which reminded me of her wonderful fudge recipe. Bumped, just in case you need more sugar in your life....

Arachne was also famous for her love of Opal Nero. If we leave a bottle on the bar at Shakes, maybe she'll make an appearance.

Note that Opal Nero contains elderberry, which is an effective remedy against flu.

Here's another bottle of Opal Nero. I would like to see Arachne again too!
