I did have one scrambled egg this morning, with chopped sauteed Italian parsley and a big sprinkle of Parmesan cheese, on a whole grain English muffin.

Good stuff, and easy to fix.

The only other "fancy" cooking I've done recently is curried mock-chicken salad. But that was tasty, too. After it had a couple of days to "mature" in the fridge.

To answer Ibby's earlier question, the brand I use is Chik'n, which is a mix of soy and some flour-y stuff. I haven't yet reached the culinary heights with it that the local Vege-Grill lunch place has, but these things take time and practice to learn.

Honestly, I started using the stuff because I liked it ready-cooked already, and after attempting a billion different methods of poaching skinless chicken breasts at home, I gave up. Invariably they are flavorless shoe-leather all the way through. Or worse yet: a raw center ringed by flavorless shoe leather. (Also, if I never have to trawl through another pious diet lecture in the course of just trying to seek out a nice recipe for a simple meal, it'll be too soon.)

Yeah, with chicken I don't like it boiled or poached. Not enough flavor. Grilled or baked, at the minimum.

exception would be if it was in a soup.

To have any flavor when poached or boiled, chicken needs to have the skin on, and dark meat maintains moisture better than white. (You can always remove the skin after the cooking's done.)

If the blazing heat will just stay at bay for another week or so, I may even get to prepare one of them. A heap of spicy chicken over cold whole-grain noodles or shredded cabbage would be heaven.

"Hot pot" makes me think of HotPoint, the 1970s manufacturer of dishwashers and fridges.

As a four-year-old, I saw a commercial in Spanish for HotPoint with a really cute and catchy jingle.

I still remember the jingle today:
