This thread also reminds me: We just polished off the last jar of marinara sauce that I made last month. So I'll have to make more this week.
My old Great Dinners From Life cookbook always advises that when you thaw and reheat a jar of frozen sauce, you add a pinch of oregano and basil, plus a splash of red wine to help "wake up" the sauce as it simmers.
(Of course, it also advises putting bacon grease plus a tablespoon of salt in a pot of sauce as it cooks. The 1960s were weird. Did everyone just have dead tastebuds because of their three-pack-a-day smoking habits? As you might guess, that's some cooking advice I ignore...)

You should try the local spaghetti sauce here, cleome. People put sugar, banana ketchup (yes, there is such a thing!) and condensed milk into the sauce. And lots and lots of cheese!
