I've used carrots, and surprisingly they do give a fairly noticeable taste.
I usually mix tuna in with my omelettes. They make a great combination.

No to all 3 of the above. Potatoes surprisingly add quite a nice bit of texture and some flavor, and are good if you want a really filling meal. Tomatoes are a staple in my omelettes. Sometimes I even forego the ketchup. I rarely include sausages in my omelettes, but Blaze and I once made a mega-omelette with almost everything on it and added sausages just because. My question...

And that is correct! I've never cooked an omelette with shrimp in it, and I honestly also can't recall ever eating an omelette with shrimp.
