All I had on hand was regular ol' American cheese slices, but hit the deli for slices of exotic cheeses to make your sandwich even more indie-rawk!

Be sure to lightly pepper your cheese prior to grilling!

I can't stand American cheese, but mixing up the cheeses is certainly a good idea.

Can't really do cheese alone, either. I'd have to have one with pickles or tomatoes.

For the very best grilled cheese, use extra sharp cheddar sliced thin (in layers separating the other ingredients), on rye bread, add thin sliced tomatoes, crumbled bacon (NOT Bacon bits), and onion and/or red bell peppers (again thin sliced).

Serve with a hot mug of tomato soup, and chips.

Brie is to die for! But, then, I love all cheese - even (and sometimes especially) the stinky ones.

Adding tomato slices to your grilled cheese is actually fantastic. I loathe pickles.

Buttery, grilled rye bread is aces.

And, tomato soup, is a staple food for me!

Golly! I need to eat lunch!

Grlled cheese sammiches are great because of the variety of ways they can be made...

Another favorite of mine is provolone cheese with ham, tomatoes, and hot mustard on whole wheat bread.

But, the tomato soup requirement as the side of choice doesn't change with the sammich.
